Metering fog and mist

In Florida close to the ocean, one is presented with situations in which fog and mist create interesting and challenging photographic opportunities. I wonder if any might have suggestions as to how to meter the highlight values while applying BTZS methods to such fog and mist shrouded scenes. One wants to retain the texture of the fog and mist, but also needs to record the exposure and development accurately so as to retain some detail of objects WITHIN the fog/mist and not burn out the highlights.
