It sounds as though your test procedure was fine. I wouldn't worry about the ES "discrepancy." Papers vary a lot and a shift of one grade is not at all uncommon. I suspect your results are valid and I'll guess that the paper will behave like a grade 4 when you use it to make prints.
You've just discovered why we advocate personal testing; materials don't always behave the way they're supposed to.
