A 40% difference in development time is pretty extreme but it's unlikely to be due to developer "starvation." If you're using the BTZS film tubes the ratio of developer volume to film area is constant which eliminates the "number of sheets" as a possible source of error. Temperature differences are more likely; depending on your ES the "normal" time for that combination appears to be somewhere around 9 minutes at 20°C or about 7 minutes at 75°F.

But if you can't find an obvious reason for the differences between your and other people's data, trust your own numbers. You can get general development times from a 3-sheet film test but a full 5-sheet series will provide two more chart data points for improved information.
