Use the paper that gives you a middle curve. IOW, if you have made 7 grades from -1 to 5, use the curve that gives you a grade of 3, and use that ES as your DR. This way you have some leeway in case you make a metering/developing mistake. It is what I use for my pt/pd printing and it has worked for me very well, I do make mistakes...
