Incident metering of a flat scene |

Hello again to all of my friends here!
I have a question concerning incident metering. When one is faced with using the BTZS methodology to meter a flat scene-for example, a wooden door in shade, or some tree roots in a forrest, etc. -how does one "meter' for the highlights? The entire scene is in flat light, and in the examples provided, the door is zone 5 and the roots perhaps in zone 3 or 4-but there is no sun and no highlights....what is the high EV?
