Sounds reasonable. Your single reading (for a 5-stop range) should yield a very snappy print image with somewhat greater-than-normal contrast that will probably emphasize the stone's texture.

This metering technique is most appropriate for completely flat surfaces in uniform illumination. Since that headstone probably had incised letters and/or bas-relief design details they would contain some soft shadows that, if measured or simulated (by shading the meter cell), would likely extend the SBR to about 6 stops. That would probably produce a more naturalistic appearance but without the brilliance of your 5-stop interpretation.
