Film is not going anywhere, we now have, as large format users, a greater variety of films than any in the past. So far the BTZS has been free of the film v digital discussions and I think I speak for many if you would please not introduce this topic here.
If you no longer like Efke because of the QC issues, you can try Ilford, Adox, Kodak (they still make tri x). If you are specifically looking for 25 ASA film then Adox would be your only choice.
IMO silver content is irrelevant, if you have the plotter program you can use the matcher function to compare the way your particular film and choice of paper would behave in the middle grays.
One trick those of us doing alternative printing use is to set our PSP higher than the calibrated point. We need a lot of separation in the shadows and middle tones, so we practically "move" the points up by exposing more. Wether this works with scanning I dont know but it is my understanding that thinner negatives are better for scanning. So if I were you I would set my PSP at 2.5 (if you have calibrated to 2.4 as per Phil's instructions) and then set my ES to 0.7 .
This will have the effect of exposing more to give you greater separation in the middle tones yet develop less to give you a thinner negative.
