You're asking a popular and recurring questiion to which the short answer is simply "you can't."

The BTZS methods of exposure/development control are designed to make development adjustments to compensate for variations in the subject range so that you can produce negatives of uniform contrast regardless of subject contrast. Obviously all the exposures on a roll of film have to be given the same development so it follows that you must either (1) devote each roll of film to subjects of the same range, or (2) forget development controls, shoot without consideration of SBR and develop for some compromiise time—then adjust image contrast during printing, using VC or graded papers.

In theory it's possible to work with roll film within the BTZS (or Zone System) procedures but in practice you just aren't going to do it without making compromises or cutting corners. So my advice is, "don't kid yourself;" if you're serious about using BTZS, use sheet film and do it right.
