The salt and sand at death valley is very reflective, it might skew your low EV reading, so when you take the shadow reading make sure you are putting something neutral underneath the meter to prevent underexposure.
You dont have to "underexpose" your film, the BTZS will take care of the exposure, you just have to choose the right places to meter. This is what is so wonderful about the BTZS. So just meter low, high and add 5...if you have done your testing this should work. As I said, the refelction from the ground might cause the low EV to read higher than it should, so if you take care of this you will be fine.
As you can see from my pics, I shoot in desertic areas a lot and I have found the ground reflection to be the greatest source of faulty metering.
